Banana Crumble Muffin

Yehey! I finally did it! I was able to bake my first muffin ever! I was supposed to bake carrot cake with cheese frosting but I decided to start with a simple recipe first. I still don’t have a mixer so making a frosting for the carrot cake will be hard.

Going back to my muffin, hehe. I chose to bake Martha Stewart’s version of Banana Muffins but I added some ingredients from other blogs that I saw online also.

Project 59 Days 1, 2, 3

Yes, I did initiate a project for myself called “Project 59″.

Project 59 is my self initiative project to bring down my weight to 59kilos. I am currently 65 kilos and I just need to lose 5 or 5 kilos.

I really hope that I can achieve my goal within the month or at least just lose some weight.

Day 1: Tuna Lettuce Cups with Cucumber and Carrot Sticks

 Recipe:

Mix together tuna, light mayo, diced onion. Add salt and pepper to taste. Cut the cucumber and carrots in sticks and drizzle with salt and pepper. Lay cleaned lettuce then spread the tuna mixture.

Day 2: A Different Egg and Tuna Sandwich

Recipe:

Boil eggs for about 7 minutes. Slice eggs then lay in toasted bread. Top eggs with light mayo, salt and pepper.

Day 3: Crispy Noodles Cravings Satisfied

Crispy Noodles bought by my hubby in Jalan Membina.

Aside from eating healthy dishes, I also started with Jillian Micheal’s 30 Day Shred exercise. It was really intense that’s why I’m thinking of changing it.

I am also starting with my Zumba Classes this Sunday.

I really hope that I can be healthy starting next year.

My First Try in Making Pineapple Upsidedown Cake

I must say, my first try in making this dish popularized by my colleague, Efren, was “quite” good.

As you can see in the picture below, the cake (yes, it’s a cake alright!), turned out to be OK except for being too dry! The taste was good, the pineapple was sweet enough but the sponge cake was too dry. Maybe because I left out putting oil and butter.

Chilli Beef Dinner and Buttered Bread and Ham Melt

Sharing to everyone Doms dinner a while ago and my super yummy sandwich.

Chilli Beef

1. Marinade overnight beef strip loin in light soy sauce, chopped garlic, oyster sauce and chilli sauce and tabasco.

2. In a hot skillet, pour olive oil and fry carrots sliced in matchsticks. Remove carrots then fry beef strip loin. Add bean sprouts and carrots.

3. Add sliced red chilli peppers and tabasco.

4. Serve with hot rice.

Buttered Bread with Ham Melt

1. Heat pan and cook ham until crispy.

2. Slice edges of bread then spread butter.

3. In a hot non-stick pan, grill buttered bread then arrange ham and grated mozzarella cheese.

4. Add lettuce and mayo.

I really wish that I can loose weight already. I hope my yoga class, early morning walks and no-rice dinner will help!
